Since I was a kid I loved Christmas and my favourite thing to do was to help my mother make traditional Christmas cakes. She used to sell these cakes to the local coffee shops and I remember the excitement of receiving large orders a few days before the big day. I never forget that it used always to be 100 dozens. That is a massive amount considering we had to make them all in a tiny flat kitchen. I was always the designated evening cook and remember I was only 14 at the time.
Well, we never missed an order and we always managed to deliver the freshly made cakes to the coffee shops. I think this is the reason I always wanted to open a bakery and deliver amazing service to all my customers.
